Ingredients to make Sabudana Kheer
Sabudana – 1/2 cup
Milk – 4 cups
Cardamom powder – 1 tsp
Desi ghee – 1 tbsp
Cashew nuts chopped – 1 tbsp
Raisins chopped – 1 tbsp
Saffron threads – 1 pinch
Sugar – 1/2 cup (as per taste)

How to make Sabudana Kheer
If you are going to make sago kheer during the fast, then first clean the sago and put it in a deep bottom vessel. After this, pour three-fourth cup of water in the sago and keep it soaked for 1 hour. After this, cut cashews and raisins into small pieces. If you want, you can also include almond shavings. Now put milk in a nonstick pan and heat it on medium heat.

After 4 to 5 minutes the milk will start boiling. After this add sago soaked in milk and mix. Now let the Sabudana Kheer cook on medium flame for 10-12 minutes. During this, keep stirring the kheer from time to time with the help of a big spoon. When the sago becomes soft, add cardamom powder, saffron thread and sugar as per taste to the kheer and mix well.

Cook Sabudana Kheer for one or two more minutes, after that turn off the gas. Now take a small nonstick pan and heat ghee in it. After melting the ghee, add cashews, raisins and fry for 1 minute. After this, take out cashews, raisins and mix them in Sabudana Kheer. Tasty and healthy Sabudana Kheer is ready. You can serve it hot or cool it in the fridge.
